You’ve probably figured out by now that I am all about keeping things simple. While I like to cook from scratch whenver possible, getting a gourmet meal onto the table just isn’t doable a lot of the time. The next best thing for me is to doctor up something that is ready made. Heck, some of the best cakes I’ve ever baked came from a box mix and a few added ingredients.
Now that school is back in session, I’ve been caught up in a vicious cycle of frozen meals and PB&J sandwiches for lunch. It’s hard to put a lot of effort into a creative lunch when it’s just me and my Mom here at the house.
