As a single mom, there are days when I feel like a complete and utter failure. I wonder how I can possibly be everything to everyone and do the many things that need to be done in a day. I don’t want to let anyone down, especially my children. There are days when getting a homemade meal onto the table seems like an impossible task. Self-doubt can be brutal. One of my many mom super powers is the ability to shop smart to make sure my family has everything they need. My little super hero, T, likes to help me shop at Sam’s Club where we buy the 3.5 pound bags of Tyson® chicken products and Tyson® Chicken Nuggets 5lb bags that make mealtime seem effortless.
Now that T is home for summer break, I’ve had to come up with some nutritious lunch ideas that she will enjoy. There are only so many times you can make PB&J without complaints. Easy Chicken Parm made with Tyson® Crispy Chicken Strips is one of our favorites. I feel good knowing that I’m feeding my family chicken that is 100% all-natural and contains no artificial ingredients.
This easy Chicken Parm recipe is so simple to make and is ready in just 20 minutes. Perfect for lunch or a busy weeknight! All you need are 3 ingredients: Tyson® Crispy Chicken Strips, prepared marinara, and sliced Provolone or Mozzarella cheese.
Easy Chicken Parm in Just 20 Minutes
Yields: 2 servings
Ingredients:
4 Tyson® Crispy Chicken Strips
½ cup prepared marinara sauce
2 slices Provolone or Mozzarella cheese
Directions: Preheat oven to 400 degrees F. Bake chicken for 18 minutes. Remove from oven and spoon some marinara over chicken. Top with cheese slices and bake an additional 2 minutes, until cheese is melted.
I must confess that I do feel a wee bit like Wonder Woman when I can put a meal like this onto the table in just 20 minutes.

Although I am lucky and have plenty of time most days to cook from scratch, some days I just want a break and don’t like restaurants (I almost always leave feeling like I could have cooked something better for less money). This would be a great recipe for one of those days!
