Easy Weeknight Dinners

With school in full swing and the holiday season fast approaching, having time to cook dinner is challenging at best. I have partnered with Alexia Foods to share some tips, along with easy weeknight dinners to help you get through this busy season.

I focus on a few things when planning weeknight meals. They have to be simple and quick to prepare. I also try to make sure that we have a protein, a starch, and a vegetable on most nights. Then a meatless night once or twice a week is a great way to stretch the budget.

Since Mondays are usually crazy, a rotisserie chicken from the market is the perfect.

This meal consists of a rotisserie chicken from the market, Alexia Smart Classics Crinkle Cut Fries, and steamed broccoli. By popular demand, I usually have some fry sauce on hand. Do you ever make fry sauce? It’s just equal parts of ketchup and mayonnaise, and it’s delicious!

Next up, we have turkey burgers and Alexia Onion Rings with Panko Breading and Sea Salt.

To save time, I buy the pre-made fresh turkey patties and sprinkle on some seasoning salt. Then I just cook them up in a skillet or grill pan. Be sure you put lots of lettuce and tomatoes on the burgers to get a serving of vegetables.

My family loves these onion rings. They are so crunchy on the outside and tender on the inside. Yum!

Salisbury Steak is always a hit with my family, and it’s so easy to make. I’ll share my recipe with you. Don’t get intimidated by the ingredient list. It’s all stuff you probably already have in your pantry. You can also make the patties up the night before.

Salisbury Steak Recipe

Ingredients:

Meat Mixture:

1 1/2 pounds ground beef

1/2 cup seasoned breadcrumbs

1 tablespoon ketchup

2 teaspoons dry mustard

Several dashes of Worcestershire sauce

1 teaspoon garlic powder

2 teaspoons beef granules

1 tablespoon parsley flakes

Salt and pepper

1 tablespoon butter

1 tablespoon olive oil

Gravy:

1 yellow onion, diced

2 cups beef broth

1 tablespoon ketchup

Several dashes of Worcestershire sauce

2 teaspoons garlic powder

1 tablespoon seasoning salt

1 teaspoon cornstarch

Ground black pepper to taste

Directions:

For the meat mixture, combine all of the ingredients, except the butter and olive oil, in a large bowl. Mix until it is well combined. Form into 6 oval patties. Fry the patties in a skillet with the butter and olive oil, over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet to a plate lined with paper towels.

For the gravy, reduce the heat to medium and add the diced onions to the pan. Stir and cook until golden brown and tender. Add the beef broth, ketchup, Worcestershire, garlic powder, seasoning salt, and pepper to the pan. Sprinkle the cornstarch over the pan ingredients and stir with a whisk until well combined. Stir and cook to reduce, for a few minutes.

Return the patties to the gravy, and spoon the gravy over top. Allow to simmer and heat through.
