After much anticipation, the Family Dollar More for Less Recipe Challenge has finally begun. Laura and I are super excited to have our Spaghetti Carbonara as one of the ten recipes in the challenge. Our mission was simple. We were to create a delicious dish using ingredients purchased at Family Dollar, and stay within a budget of $15. With the new and expanded food assortment available in many Family Dollar stores, it’s simple to put a meal onto the table that your family will love.

Spaghetti Carbonara

Ingredients:

1 pound Barilla Spaghetti
8 slices Bar-S Sliced Bacon
2 teaspoons Family Gourmet Minced Garlic
salt and pepper (Family Gourmet Iodized Salt & Pepper Duo)
3 Grade A Large Country Charm Eggs
¾ cup Family Gourmet Grated Parmesan Cheese, plus more for serving
½ cup PET Brand Half and Half

Spaghetti Carbonara

Directions:

Set a large pot of water to boil (for pasta). In a large skillet, cook bacon over medium heat, stirring occasionally, until crisp almost, approximately 7 to 10 minutes. Add minced garlic and cook an additional 1 – 2 minutes, until bacon is crisp. Using a slotted spoon, transfer to a paper-towel-lined plate.

Salt boiling water generously; add pasta and cook until al dente, according to package instructions.

Meanwhile, in a large bowl, whisk together eggs, Parmesan, and half-and-half. Set aside.

Drain pasta, leaving some water clinging to it. Working quickly, add hot pasta to egg mixture. Add bacon and garlic; season with salt and pepper, and toss all to combine (heat from pasta will cook eggs). Serve immediately, sprinkled with additional Parmesan cheese.
