Italian White Bean Chicken Recipe

Getting a healthy homemade meal onto the dinner table during the week is challenging at best for most parents. It is certainly something that I personally struggle with. I’m always up for a challenge, so when Whole Foods Market asked me to participate in the Cook More, Save More Blogger challenge I simply had to say yes. To participate in the challenge I needed to create a unique recipe, where each serving is under $4. Several members of my family are doing a low-carb diet at the moment, so even our holiday meals will be a little tricky this year. I tend to overdue it on the carbs most of the time, so maybe their diet will rub off on me a little. For my participation in the challenge, I made a creative and healthy weeknight dinner of Italian White Bean Chicken.

Italian White Bean Chicken Recipe

I absolutely love Italian food, but for me that usually means a bowl of pasta dripping in melted cheeses. I am so glad to say that this healthier Italian meal was just as, if not more, delicious and satisfying as that bowl of pasta. Making it even more appealing, this Italian White Bean Chicken recipe is a one pot meal!


2 clove garlic, sliced
4 boneless, skinless chicken breast halves
4 zucchinis, sliced
2 (15.5 ounce) cans white beans, drained
2 roma tomatoes, chopped
10 fresh basil leaves
salt and pepper to taste


Prepare a skillet with cooking spray and place over medium heat. Cook the garlic in the skillet until browned. Add the chicken and cook until slightly browned, about 3 minutes per side.

Stir in the zucchini and white beans into the skillet; cover and cook about 5 minutes. Scatter the chopped tomato over the dish; cover again and cook another 2 minutes. Add the basil leaves and cook 1 minute more.

Season with salt and pepper to serve.

While we all hope our home-cooked meals resemble the beautiful images sprinkled throughout Pinterest, reality doesn’t always match the fantasy.   49. Veggie lasagna. I don’t always use the same veggies, it is more seasonal. Although it takes time to make this, it is worth it. Some of my favorite ingredients to use are zucchini, eggplant, roasted red peppers, spinach, artichoke hearts. I use two sauces béchamel and tomato and use several cheeses.

    I like to do a stir fry with whatever vegetables I have on hand and some chicken or shrimp. Servie with a side of brown rice.

  61. I make what we call Sizzling Salad. It’s just a chopped green salad with lots of veggies and then I grill a chicken breast or steak that has been rubbed with a peppery spice rub. I slice the meat into long, thin slices and place it on top of the salad. So good with your favorite salad dressing.

I use a frozen variety of vegetables with whatever we have available fresh (or even slightly wilted. For The sauce I use a combination of rice wine vinegar, sesame oil and soy sauce. I grew up with a mother who broiled everything (even going so far as to slice zucchini in little round slices and broil them, turning each slice over halfway through), so I don’t like fatty food. The easiest healthy thing I like to do is to make my tuna salad with plain lowfat yogurt instead of mayo, dill relish instead of sweet, a little minced onion, and then eat it on wedges of bell pepper.

    A healthy a meal I like to make at least once a week is something with no meat. I’ll usually steam brown rice or sometimes will use quinoa and steam an assortment of veggies and drizzle a little olive oil over it with a squeeze of lemon juice. I just mix it up every time so we don’t get bored eating it, even though it’s usually just once a week. It comes together quickly and is very satisfying and filling!

    We grill a lot of chicken in this house. My husband does not like anything on it – so basically I use extra virgin olive oil, pepper…that’s it. I bake the chicken and turn it over at least 4 times- but that’s about it. nothing can be added or my husband will not eat it.

One of my favorite dishes to make is to bake tofu that has been marinated with some low-sodium soy sauce, sesame oil, and thai red chili paste and then sprinkled with either almonds or cashews (depends on what I have on hand). I serve it with some steamed veggies (broccoli, snow peas, and carrots) over jasmine rice. It is easy and healthy and delicious.

    I have been eating less carbs and love that my crock pot can come to the rescue. I have two favorites – Italian chicken and Black Bean chicken. Put you chicken and whatever veggies in the crock pot, cover with sauce and let ‘er go. I use boneless/skinless breasts, and the meat shreds with a fork when it is done. Love to make big pots of them and put up the extras. I have my Italian with spaghetti squash and just add a little cheese to the black bean chicken. Yummy!

    I take strips of zucchini and put them in a layer on bottom of 9×13 glass pan, cover with pasta sauce and bake until they soften. Then I sprinkle cheese on it and bake til golden. Then place that on top of cooked noodle. Yummy and Healthy dinner! :)

    1/2 cup Parmesan cheese
    1 cup Greek yogurt -plain
    1 tsp garlic powder
    1 1/2 tsp Mrs. Dash (Garlic & Herb Blend)
    1/2 tsp pepper
    Italian seasoned dry bread crumbs
    4-6 average sized chicken breasts

    Preheat oven to 425°.
    Combine first 5 ingredients in medium bowl. Lightly season both sides of chicken with your choice of seasoning. ( I use Mrs. Dash, garlic powder, onion powder, & black pepper) & arrange chicken on a Pam sprayed baking sheet. Evenly top with Yogurt/Parmesan mixture, then sprinkle with bread crumbs. Bake until chicken is thoroughly cooked, about 20-25 minutes. So much better than fried!

    I can’t say that it is particularly creative, but we make a (pretty) healthy soup with chicken sausage, refrigerated tortellini, tomatoes, onion, chicken stock, and tomato sauce. and garlic, lots of garlic and italian seasonings. It is soo good.

  223. Cheating Spaghetti – cheating because it is so easy and because it is so healthy. Saute a pound of ground bison in a little olive oil with a can of drained straw mushrooms. Add Trader Joe’s marinara and whatever herbs and spices you feel like that day. Pour over Dreamfields thin spaghetti and top with parmesan. Add a side of pineapple tidbits and canned mandarin oranges, and you are good to go. The Dreamfields pasta makes it okay for a diabetic to have pasta as a main dish, and tastes great.By using short-cut ingredients, you can get this to the table in 30 minutes flat.While I prefer to cook with fresh ingredients, it is nice to have “pantry meal” options. The bison can be kept in the freezer, and everything else is shelf-stable, so this can be a life-saver when you can’t get to the store.

I love turkey burgers and I use a crockpot and add buffalo sauce to boneless chicken breasts and shred the cooked product up, then, I use greek yogurt a little dry ranch mix and a little bleu cheese crumbles to make a dressing to go on top of the chicken. I found that if i cooked mine with cloves of garlic and spices then adding au jous gravy and beef stew packets after shredding it and then adding noodlesit had some kick a whole new flavor and seemedvless heavy so probably fewer calories.

I took what I could find and made a Calzony-Type-Thingy! Ground beef, sauce, cheese wrapped in a pillsbury thin crust pizza crust! It was a huge hit and has become a regular on the menu!

    We like to make roasted veggies sweet potato, eggplant, onion, parsnip, anise or other combinations with olive oil and spices and then after having our fill of them, we eat a blended soup of them. Healthy and yummy.
