We are back to school in our county in less than two weeks, so I am already getting into school lunch mode for my grandkids. Making school lunch healthy and fun can get a little tricky at times, but it’s totally doable with a little effort, creativity and the right ingredients. I have found that one of the keys to making sure kids eat a healthy lunch is to give them lots of variety. This is true for both young children and bigger kids. In fact, I have noticed it even more as my grandchildren get older. If you are making something fun like homemade crustables, your child might even be eager to help with the preparation.

Spread on a little peanut butter and jelly and put the sandwich together. Gently smoosh down with the palm of your hand, and use a fork to crimp the edges. These can easily be made the night before, and stored in the refrigerator.

If you are worried about wasting all that crust, you can toss them in the food processor to make fresh breadcrumbs for tonight’s dinner. At my house there are two begging pups eagerly waiting for a taste of crust.

I try to keep soda out of the house for the most part, and reserve it for special occasions. Soda is a no no for school lunch too.
