Do you struggle with planning meals? I certainly do. I sometimes find it difficult to come up with something that everyone is going to like, that I can feel good about serving to my family. A dinner of lunch featuring Manwich sandwiches is something my entire family can agree on. Even my sometimes-vegetarian teenage granddaughter will chow down on a couple of Manwich sloppy joe sandwiches. Did you know that each can of Manwich is free of artificial flavors and preservatives, and offers a full serving of vegetables? That’s something I can feel good about!
Manwich is the perfect lunch on weekends when my granddaughters have friends over. A lunch made up of sloppy joe sandwiches, sweet potato fries, and salad is always a crowd pleaser. The girls had so much fun wearing oversized Manwich bibs at lunchtime. From the looks of those bibs when they were done, they were very much needed. It takes a double, sometimes triple batch of Manwich to feed my large, extended, hungry family. I like to mix and match the sauces. For example, I’ll mix the Manwich Bold Sloppy Joe Sauce with the Original Sloppy Joe Sauce for just a little bit of zest.
What do you do with Manwich leftovers? You make a casserole, of course! I love having Manwich leftovers to serve for lunch the next day. Or I’ll use it to make a casserole for dinner later in the week.
Manwich Sloppy Joe Casserole
1 (16 ounce) can Manwich Sloppy Joe Sauce
1 pound ground beef
1 box prepared spaghetti noodles
½ cup green onions, sliced
1 cup grated Cheddar cheese
In a large saucepan, cook ground beef until no longer pink. Drain the grease. Add Manwich Sloppy Joe Sauce and stir until well combined. Warm through and remove from heat.
Spray a 9 inch x 13 inch casserole dish with cooking spray. Lay the prepared noodles into the pan, in an even layer. Spoon the meat sauce over the noodles. Using a spoon work some of the sauce into the noodles, leaving most of the sauce on the top in an even layer. Sprinkle sliced green onions over and grated cheese over the top.
Bake in a preheated 350 degree oven for 10 minutes.
This recipe is perfect for using up your Manwich leftovers. Just estimate how much pasta you need according to your leftovers. Don’t worry if it’s not exact. The beauty of a casserole is that anything goes!
