Pickle Bites Appetizer

When I posted a picture of this Pickle Bites appetizer to Instagram the other day, I learned that I’m not the only one who likes to make this simple 3 ingredient appetizer. One person suggested using ham instead of my usual corned beef, and I will definitely be trying that next time around. That’s one of the things I love about sharing recipes on the blog – it’s all the wonderful feedback and ideas I get from readers.

Pickle Bites Appetizer

These pickle bites couldn’t be any easier to make, although it’s been a while since I whipped up a batch. They seem to start appearing around here when the grilling season starts up. If you’re a fan of the dill pickle, you’re gonna love this simple appetizer. It’s always such a crowd pleaser around here.

Ingredients:
sliced corned beef from the deli (about .5 pound should do)
dill pickles
herb cream cheese spread (I typically use the Philadelphia Chive and Onion spread.)

Spread approximately one tablespoon of cream cheese onto each slice of deli meat. Place a dill pickle at one end of a slice of meat, carefully roll until the deli meat is completely wrapped around the pickle. The cream cheese will bind it all together.

Using a knife, cut the rolled pickle into 1/2 inch slices. Serve immediately or store in the refrigerator.
