Pretty Pastel Deviled Eggs for Easter

I love the colors of the Easter season, all the pretty pastels in pink, purple, yellow, and blue. It’s always so much fun to dye Easter eggs with the kids, and later on the eggs get turned into egg salad or deviled eggs. But what if you could serve your guests deviled eggs that have the same pretty colors? It’s much easier to do than you might think!

First boil your eggs, remove the shells and carefully cut the eggs in half. Scoop the yolks into a bowl, to create your filling.

Fill coffee mugs or glasses with water, a teaspoon of apple cider vinegar, and several drops of food coloring. Place the egg halves into the cups and allow them to sit and soak in the color. It took approximately 30 minutes for me to achieve the color I wanted.

Next, whip up a batch of your favorite deviled egg filling and pipe it into the pretty pastel egg halves. I pretty much eyeball the ingredients when making deviled eggs, but add to the yolks a bit of mayonnaise, mustard, salt, small amount of sweet relish and chopped olives. If I happen to have some on hand, I garnish my eggs with capers.

How do you add a little color to your Easter celebration?
