Boil diced Yukon Gold and sweet potatoes in salted water until tender.

Step 1

Combine cooked potatoes with garlic, cashews, and seasonings, then blend until creamy.

Step 2

Boil elbow macaroni until al dente, save 1/2 cup of pasta water.

STEP 3

Mix the pasta with vegan cheese sauce, adjust consistency with pasta water, season, and enjoy.
