With the holiday season fast approaching, this is the perfect time of the year to get the kids into the kitchen. This corn chowder recipe from Knorr® comes together easily, and is a great dish to let the kids help prepare. My 8 year old absolutely loves helping out in the kitchen, and I love easy recipes like this one that she can help with.
This recipe conveniently uses Knorr® Homestyle Stock and a package of Knorr® Rice Sides™ Chicken flavor. You also have the option to use frozen corn instead of fresh, which in my humble opinion is just as good. Plus, it makes this soup recipe even simpler to prepare.

Autumn Corn Chowder
Makes 8 cups, Preparation Time 10 min, Cooking Time 25 min
Ingredients:
2 slices reduced sodium bacon
1/2 cup leek, finely chopped, white parts only
10 ounces peeled butternut squash, finely chopped
2 stalks celery, finely chopped
2 cups fresh corn or thawed, frozen corn
8 cups water
1 tub Knorr® Homestyle Stock – Reduced Sodium Chicken
1 package Knorr® Rice Sides™ – Chicken flavor
Directions:
Cook bacon in large saucepot until crisp, about 5 minutes. Remove bacon from saucepot. Set aside and reserve drippings.
Cook leek, squash, celery and corn in reserved drippings over medium heat, stirring occasionally, until vegetables are tender, about 5 minutes. Add water and bring to boil then reduce heat to medium low and cook 10 minutes. Remove 2 cups of broth and vegetables and set aside.
Stir in Knorr® Homestyle Stock – Reduced Sodium Chicken and Knorr® Rice Sides™ – Chicken flavor. Cover and cook 7 minutes or until rice is tender.
Meanwhile, process reserved 2 cups broth and vegetables in blender until smooth; stir into saucepot and cook until heated through. Garnish, if desired, with fresh parsley.

One of the few things I like about the cold weather is soup. As soon as fall rolls around I celebrate what I call soup weather.
That soup looks so good. I like that idea of using Knorr in it.

Yay for the ingredients being low sodium! Canned soups were a regular here, I ate a lot of them on nights where Abby was at her dads, since it’s silly cooking a big dinner for just me. And I LOVE soup. But they are one of the biggest sodium foods, it’s crazy! I’m always looking for new low sodium recipes, especially soup…. And we grow our own corn, so I have loads of frozen corn, and my mom just recently picked the last of the squash. Definitely gonna give this a go 🙂
