In my house, about once or twice a week, I have a night when I try to use up all of the leftovers in my fridge and fresh produce that is about to go bad. It’s usually just before time to do the grocery shopping again. Sometimes I have to get a little creative. It reminds me of that show on Food Network, Chopped, when they have these random ingredients in a basket and they have to make something that will wow the judges and help them make it to the next round and ultimately win. For me, I put all the ingredients together and see what kind of tasty creation I can make. If my family approves, then I know I have a winner. Some of the best meals I have come up with have been during my own personal Chopped challenge. When I heard about the Food Network Chopped at Home Challenge I knew I was up for the task. The Chopped at Home Challenge is for anyone at home to take part just like they were on the show. There are 4 ingredients that are in the Chopped basket that must be in the dish : Corn, Lemon, Fresh Basil, and Feta Cheese.
As soon as I saw the ingredients in the Chopped Challenge basket I know what I should make. I came up with a flavorful and oh-so simple to make recipe: Baked Mediterranean Chicken.
This baked Mediterranean Chicken recipe comes together easily and is perfect for a busy weeknight.
For my recipe, it is important to use Del Monte® Whole Kernel Corn because it is picked at the peak of freshness and it is packed within hours. I always have a few cans sitting in the pantry. All that you will find in the can is vibrant sweet corn, water and a dash of sea salt. That is it. The corn is non-GMO and non-BPA intent. Baked Mediterranean Chicken
Ingredients:
2 large boneless skinless chicken breasts
1/2 C. Del Monte whole cut canned corn
1/4 C. hummus, any brand
juice of one lemon
1/2 red onion, cut into slices
1/8 C. sliced black olives
1/2 C. cherry tomatoes, sliced in half
salt & pepper
1/2 tsp. oregano
1 tsp. chopped fresh basil
1/2 tsp. paprika
1/2 tsp. garlic powder
Feta crumbles
Pita bread (optional)
Directions:
Preheat the oven to 350 degrees and spray an 8×8 baking dish with non-stick cooking spray.
Place the chicken breasts in the bottom of the baking dish.
Salt & pepper the chicken.
Combine the oregano, basil, paprika and garlic powder and sprinkle over the chicken breasts.
Spread the hummus over the top of the chicken breasts.
Squeeze the juice of 1 lemon over the chicken breasts.
Place the onion slices, Del Monte corn and sliced black olives on top of the chicken.
Bake for 25 minutes and then add the sliced cherry tomatoes to the baking dish and bake for another 20-25 minutes.
Remove from the oven and sprinkle with crumbled feta cheese.
