What kind of carrots should you use?

Honestly, you should use whatever kind of carrots your family enjoys. I often make my decision based on what’s on sale. My local grocer had 2-pound bags of carrots on sale, so that’s what I used last week when I made this dish. I simply peeled them, and halved them lengthwise. Some of the larger ends, I halved again. You could use baby carrots, crinkle cut carrots, even some pretty heirloom carrots. Use whatever carrots you have, and the honey glaze will make them delicious.

How do you make honey glazed carrots?

After you’ve prepared the carrots and spread them out onto a baking dish.

Melt some butter in a saucepan. Stir in a little garlic, dried thyme, salt and pepper. If you don’t have dried thyme, you could substitute with dried rosemary or Italian seasoning. Add some honey and stir until just warm.

Pour the honey and butter mixture over  the carrots and give them a toss. Go ahead. Get your hands dirty.

Pop into the oven and roast until caramelized and glazed and fork tender.

Tip: You can peel the carrots and coat them in the honey mixture up to 4 hours before you plan to roast them. This is helpful when you are serving this carrot side as part of a big holiday meal.

  • Preheat oven to 400 degrees. 
  • Melt butter in a saucepan, over low heat. Stir in thyme, garlic, salt, pepper and honey. 
  • Place carrots on a large baking sheet. Pour glaze over carrots and toss to coat. 
  • Roast until caramelized and fork tender, about 35 to 40 minutes.
