I’m trying to do things a little healthier around hear. You’ll never guess that dense fudge brownies contain a full can of black beans. It’s such a fun way to sneak a little extra protein into your family’s diet. These black bean brownies are a delicious and nutritious twist to a traditional chocolate brownie.

There some flourless, gluten-free recipes out there for black bean brownies. But this recipe is simply a healthier brownie recipe made with black beans and coconut oil. They are surprisingly delicious and something the whole family will enjoy.

Black Bean Brownies Recipe

Ingredients:
1 can black beans, 15 oz, rinsed and drained
1/2 cup unsweetened cocoa powder
1/4 cup coconut oil, in liquid form, microwave if necessary
1/2 cup honey
1 teaspoon vanilla
3 eggs
1/2 cup flour
1/4 teaspoon salt

Directions:

Preheat oven to 350.
Grease a square baking pan with cooking spray.

For “full bean” brownies as shown in photos:

Mix all ingredients in a large mixing bowl by hand. You can mash the beans slightly while stirring. Pour into prepared baking pan and bake for 30-40 minutes. Cool completely before cutting.

For “hidden bean” brownies:
Pour beans into a mixing bowl and use a mixer to break apart the beans. Add remaining ingredients and mix until combined. Pour into prepared baking pan and bake for 30-40 minutes. Cool completely before cutting.

Notes: the “full bean” brownies look like nuts, but they are obviously not. They are a little firmer than the batter, so you get a difference in texture when you eat it. I liked it. It’s not for everyone, but certainly something to try.

  • I cannot eat regular flour and never use sugar hardly ever. Plus, beans are not on my diet, all because of health issues. So……..I use coconut flour-which is surprisingly sweet! Then I also add almond flour, bp, regular coconut oil, real vanilla, cocoa, lots of eggs, and some stevia. So just for those who have diet issues you can even make these with other options.
