In case you haven’t noticed, we’re having a heck of a heat wave this summer. Here in Georgia it’s been too hot for our family to eat outside on the porch, so we’ve been bringing the outdoors in with Target summer entertaining products. It’s a great way to be cool on a hot summer afternoon!
Target has a fantastic assortment of colorful summer dining and serving items such as the fun strawberry design melamine plates we received, along with matching tumblers. To jazz our summer table up even more, Target also sent us a beautiful green salad bowl and tongs with a bamboo lid.
I really like serving our meals on the melamine plates in the summertime. They are light weight, easy to clean, and toddler proof. The vibrant strawberry design really brightens up the table and makes us feel like we are enjoying a picnic outdoors.
The bamboo lid on the salad bowl is multi-purpose, also serving a a cutting board or a place to prepare sandwiches. The bright green color of the bowl coordinates nicely with the stems of the strawberries. Even the bamboo serving spoons have a splash of green on them.

Heating up the oven is something I try to avoid in the summertime. My Heatwave Chicken Salad is the perfect meal for hot summer days. It’s easy to prepare and the whole family enjoys it.
Heatwave Chicken Salad
Ingredients
- 1 rotisserie chicken from your supermarket's deli
- 1 cup mayonnaise
- 1/2 cup bottled balsamic dressing
- 3 stalks celery diced
- 1 cup seedless grapes halved
- 1 cup blueberries
- 1/2 cup chopped walnuts or pecans
- salt and pepper to taste
Instructions
- Tear chicken into bite size pieces and set aside in a large bowl.
- In a medium size bowl, combine mayonnaise and balsamic dressing. Stir diced celery, grapes, blueberries, and walnuts. Add mixture to chicken, stirring until well combined. Salt and Pepper to taste.
