Birds nests are perfect to make during the spring. Over the years, I have made bird nest sugar cookies and cookie bowl birds nest dessert. This year, I wanted to make something a little different and decided to go with cupcakes. In the past, I have made similar cupcakes using dyed coconut, but this year I wanted to do something just a little different. Using chow mein noodles, or a cereal a similar shape, like Fiber One Bran Cereal, you create a nest for eggs to sit in.
Can I Use Different Candy For The Birds Nests?
I am using jelly beans as the candy for my birds nest but you can use other candies as well. Chocolate eggs, like robin eggs, can be used or even just pastel M&Ms.
How To Store These Easter Cupcakes?
These spring cupcakes can be stored at room temperature. You want to make sure they are covered well. I like to use a cupcake holder. This keeps the cupcakes protected from the air while also keeping them fresh.
Can I Freeze Cupcakes?
Storing cupcakes in the freezer is a great way to have cupcakes on hand all the time. The birds nest cereal pieces or chow mein noodles will lose their crunch once they come out of the freezer, so if you are concerned that the cereal will have a different texture, you can wait to add the cereal until after the cupcakes come out of the freezer.
Place the cupcake on a plate or a baking sheet and then place it in the freezer. Once the cupcakes have hardened, about an hour, remove the cupcakes and wrap them with plastic wrap. Once the cupcakes are wrapped, you can place them in a freezer bag.
To thaw the cupcakes, place them on the counter overnight when you are ready to serve them.

- 1 tub of frosting or your favorite frosting recipe
- Chow Mein noodles or bran cereal like Fiber One
- Jelly beans or candy coated chocolate eggs
How to Make Birds Nest Cupcakes
Make the cupcakes according to the package or recipe directions.
Once cooled, frost the cupcakes.
Add 3 jelly beans or candies to the center of the cupcakes.
Then press the chow mein noodles gently into the frosting in a circle fashion, forming a nest.
Enjoy.

This does look very easy, and fun for the kids to help with. I never would have thought of using Chow Mein noodles in a sweet treat, but….why not? It gives a nice texture and flavor, I bet! I have never tried a pink lemonade cake mix, but it does sound VERY good!
