I love a good celebration. So often it’s the little things that mean the most and give us cause to celebrate. A celebration doesn’t have to be a big fancy party or cost a lot of money. It can be the simple act of spending time with the people you love. I like to celebrate with a special meal. You know me. In my house, food is love. Whether you are celebrating your child’s good report card, Dad’s promotion at work, or are just feeling thankful for a beautiful sunny day, this easy weeknight celebration dinner is just the way to do it. Good grades are worthy of a big celebration at my house. Moving into a new home and changing schools has made 3rd grade challenging for my 8 year old. Educators say that the simple act of changing schools can set a child back an entire school year. I believe it. Tati has been working really hard to bring her grades up, so whenever she brings home a good grade its cause for a celebration.
She got an A on her Social Studies test. Great job!
During the busy week, I try to keep dinner prep to under 30 minutes. If my parents aren’t joining Tati and I for dinner, it is often just the two of us. Bertolli & PF Chang’s Frozen Meals are perfect to keep in the freezer for special occasions and busy weeknights.
Each meal serves two which is perfect for us, but you can easily double them up. It’s so nice to just reach into the freezer anytime I want to whip up something amazing up without all the fuss. You can pick these up in the freezer department the next time you’re at Walmart.
P.F. Chang’s Frozen Beef and Broccoli is a favorite of ours. I love the simple, fresh ingredients and savory garlic soy sauce. But to celebrate Tati’s A Grade on a Social Studies test, I prepared an Italian feast with Bertolli Frozen Chicken Florentine. Grilled white meat chicken and tender spinach are prepared in a luscious sauce made with white wine and Parmesan and Romano cheeses. I couldn’t make this classic Italian favorite any better myself.
Easy Weeknight Celebration Dinner
Our weeknight celebration dinner included: Bertolli Frozen Chicken Florentine, Pesto Bruschetta, Caesar Salad, and Raspberry Gelato for dessert. This fabulous meal comes together in under 15 minutes! Seriously. It doesn’t get any easier than this.
What you’ll need:
Bertolli Frozen Chicken Florentine
1 Italian baguette (sliced, brushed with olive oil and toasted in the oven)
Prepared pesto sauce
2 Roma tomatoes, diced
Caesar salad kit
Raspberry gelato
Fresh raspberries for garnish (optional)
While the Bertolli Frozen Chicken Florentine is simmering on the stovetop, slice the baguette, brush with olive oil and toast in the oven until golden brown. Remove from oven, use a spoon to spread on some prepared pesto sauce. Top with diced tomato and some finely grated Parmesan cheese, if you like.
Prepare the salad. I love a salad kit. No washing, slicing or dicing required. Just toss the ingredients into a bowl and you’re done.
Dessert requires zero prep. After dinner, simply scoop some gelato in the fanciest ice cream dish you have. Top with some berries and enjoy. I LOVE gelato in any flavor. It quickly became my favorite sweet treat when I spent 2 weeks in Italy last summer. It is the perfect ending to this Italian inspired meal.
