After much anticipation, the Family Dollar More for Less Recipe Challenge has finally begun. Laura and I are super excited to have our Spaghetti Carbonara as one of the ten recipes in the challenge. Our mission was simple. We were to create a delicious dish using ingredients purchased at Family Dollar, and stay within a budget of $15. With the new and expanded food assortment available in many Family Dollar stores, it’s simple to put a meal onto the table that your family will love.

Can you tell that we are just a wee bit excited about this contest? Here’s our recipe:
Spaghetti Carbonara
Ingredients:
1 pound Barilla Spaghetti
8 slices Bar-S Sliced Bacon
2 teaspoons Family Gourmet Minced Garlic
salt and pepper (Family Gourmet Iodized Salt & Pepper Duo)
3 Grade A Large Country Charm Eggs
¾ cup Family Gourmet Grated Parmesan Cheese, plus more for serving
½ cup PET Brand Half and Half
Directions:
Set a large pot of water to boil (for pasta). In a large skillet, cook bacon over medium heat, stirring occasionally, until crisp almost, approximately 7 to 10 minutes. Add minced garlic and cook an additional 1 – 2 minutes, until bacon is crisp. Using a slotted spoon, transfer to a paper-towel-lined plate.
Salt boiling water generously; add pasta and cook until al dente, according to package instructions.
Meanwhile, in a large bowl, whisk together eggs, Parmesan, and half-and-half. Set aside.
Drain pasta, leaving some water clinging to it. Working quickly, add hot pasta to egg mixture. Add bacon and garlic; season with salt and pepper, and toss all to combine (heat from pasta will cook eggs). Serve immediately, sprinkled with additional Parmesan cheese.
Optionally, serve with Family Gourmet Texas Garlic Toast and a vegetable of your choosing.

We have a Family Dollar up the road, and if we don’t feel like running into town, but need a food item, we try there. They’ve surprised us more than once having exactly what we need! Your recipe sounds good. I bet my family would enjoy it.
