Fruit Punch Soda Cupcakes Recipe

There’s something about summer that brings out my adventurous side and that even trickles down to the way I bake. I don’t know if it’s that extra Vitamin K I am soaking in from the sun or the extra exercise I am getting from outdoor activities, but these warm weather months give me a lot more energy and the want to try new things. Enough so that I was willing to take on a challenge from BI-LO and create a fun summer recipe using their new Chek soda. I came up with these deliciously fun Fruit Punch Soda Cupcakes. BI-LO provided me with a variety of Chek sodas to try, and BI-LO gift card to create my recipe.

If you’ve never baked with soda before, don’t worry – you’re not going to have a fizzy explosion. What you will get is a delicious and tender cake or cupcake. I decided to go with the Fruit Punch flavor of Chek soda because it has such a bold and unique flavor. It does have a rather sweet taste, but that makes it perfect for a dessert. I was thrilled when the finished cupcakes turned out the same pretty pink as the soda, although my pictures didn’t really pick up on just how pink they are.

Fruit Punch Soda Cupcakes

Cupcakes:
1 box of vanilla or yellow cake mix (with NO pudding)
3.4 ounce box of instant vanilla pudding
4 eggs at room temperature
1/4 cup canola oil
12 ounces (1 can) Chek Fruit Punch Soda

1. Preheat oven to 350 F. Place cupcake liners in muffin pans.

2. In a medium bowl with a hand mixer or in a stand mixer, combine and mix all ingredients on medium speed for 1 to 1 1/2 minutes.

3. Pour mixture into prepared muffin pan. Bake 20 to 24 minutes or until toothpick inserted into cupcakes comes out clean. Let cool completely.

Frosting:
1 (8 oz) package cream cheese at room temperature
1 (16 oz) container Cool Whip whipped topping
1 cup powdered sugar
1/2 teaspoon vanilla

In a bowl combine softened cream cheese, Cool Whip whipped topping, powdered sugar, and vanilla. Whisk until combined and light and fluffy. Spread or pipe over cooled cupcakes.

Ingredients
  

Cupcakes:

  • These sound and look delicious. The kids can pick their favorite flavor of soda for them. Cupcakes seem to be the in thing now and even for birthday parties these would be great for the kids. thanks for the recipe – it looks really easy to make

  • I do not have a Bi-Lo near me , but I could experiment with other sodas. I have not used much soda in recipes, but your recipe has inspired me to give it a try.
