Thankfully, none of my immediate family members have a gluten intolerance, nor any other food allergies come to think of it. Although it doesn’t affect my immediate family members, I have plenty of friends and relatives that have to try and keep gluten out of their diets. So it’s always a good idea to have some gluten free foods and snacks on hand for guests. I was recently approached by Udi’s to take a Halloween challenge and come up with gluten free sweet treats using their products. I’m always game for a challenge and as you’ll see from my Gluten Free Brownie Bite Ice Cream Recipe, the odds are in my favor for this one.
If you have a gluten allergy, you probably already know about Udi’s products. This was actually my first experience with Udi’s, and I don’t know why but I was expecting them to be noticeably lacking something… you know how you can sometimes really tell the difference when eating diet food. What does gluten taste like anyways? Was it something I was going to miss?
Udi’s sent me the following gluten free products to try out:
Cinnamon Raisin Bread
Sweet & Crunchy Vanilla Granola
Chocolate Chai Muffin Tops
Dark Chocolate Brownie Bites
Snicker Doodle Cookies

I am very happy to tell you that Udi’s is AWESOME. Seriously, it is that good. The Snicker Doodle Cookies rival any of the cookies that I so proudly make for Christmas each year and the Chocolate Chai Muffin Tops… Well, there simply are no words. Clearly gluten must taste like radiator fluid, because these sweet treats are simply divine without it.
Recently, I purchased a new Cuisinart ice cream maker and have trying to come up with some great new recipes to test it out. Last night after dinner I made the family some Gluten Free Brownie Bite Ice Cream using the Udi’s Dark Chocolate Brownie Bites and it was heavenly. The sweet and creamy vanilla ice cream was so good with the little chunks of dark chocolate brownie.
Ingredients:
1 cup whole milk
3/4 cup granulated sugar
pinch of salt
2 cups heavy cream
1 tbsp pure vanilla extract
6 Udi’s Dark Chocolate Brownie Bites (cut into small pieces)
In a medium bowl, using a hand mixer or a whisk, combine the milk, sugar, and salt until the sugar is dissolved. Stir in heavy cream and vanilla. Cover the bowl and freeze 1-2 hours or overnight. Pour the mixture into your ice cream maker and pepare ice cream according to your machine’s directions. It takes my machine about 15-20 minutes to make ice cream. Cut the Udi’s brownie bites into small chunks and add to the your ice cream machine for the last 1 – 2 minutes or stir in afterward. Share and enjoy!
This recipe yields about 5 cups of ice cream.
There are sure to be many sweet treats being served in my house around the Halloween holiday. I am glad to have some delicious new gluten free desserts and snacks in my arsenal, thanks to Udi’s.

Gluten Free isn’t “diet food” – it’s usually no lower in calories, sugar, fat, etc. than the “gluten full” version – but we are conditioned to the texture and taste of wheat flour, so other flours seem strange to us at first. Good for you for branching out! 🙂
This really looks delicious and healthy. Gluten is not good for the body so we must aware not to eat foods that are more on gluten. By the way thanks a lot for sharing this recipe.
