The hot weather we’ve been having in Florida attributes to me preparing much lighter meals. I can’t stomach a heavy meal when the heat index is well over 100 degrees. Ingredients:

  • 2 tilapia fillets
  • 1 tablespoon Mazola Corn Oil
  • Salt, pepper and paprika to taste

Pineapple Mango Salsa:

  • 1 cup diced pineapple
