My family loves eating pancakes anytime of the day. It’s one of the many reasons I am thrilled to partner with the J.M. Smucker Company to tell you about PANCAKE-ISMS and some great new Hungry Jack products.

But first I want to show you my lemony pancakes with berries…

I ate these delicious protein-packed lemon infused pancakes for lunch. If you’re feeling a wee bit jealous right now, don’t worry. I’ll tell you how to make your own.

Protein-packed pancakes? That’s right! One of the new products I have to share with you is Hungry Jack Protein Pancake and Waffle Mix. It has a whopping 10 grams of protein, making it easy for you to eat a balanced breakfast (or lunch) with or without meat.

I am always looking for ways to get more protein into my family’s diet. especially in the morning. Having a protein-filled breakfast will help you feel fuller longer. In addition to the new Protein Pancake and Waffle Mix, I’m also glad to share that there’s a newly updated 27.6 oz. Hungry Jack Original Syrup that fits perfectly into the microwave.

You don’t ever want to put cold syrup on a piping hot stack of pancakes. I love how easy this is!

I like to keep things simple, so my lemony pancakes are oh-so easy to make! Since I put lemon slices into my water throughout the day, I am always trying to find new ways to use lemon zest. Adding a little lemon zest to your prepared pancake mix gives it a fresh lemony flavor.

My nieces prefer chocolate chip pancakes while my mom and son both loves banana pancakes. But I prefer to eat my pancakes with some fresh berries. Simple goodness.

Hungry Jack Pancakes 3

Lemony Pancakes with Berries

(one generous serving)

Ingredients:
1 cup Hungry Jack Protein Pancake and Waffle Mix
3/4 cup water
zest of 1 lemon
1/2 cup fresh berries
Hungry Jack Original Syrup (use however much you like)

Directions:

In a bowl, combine pancake mix and water. Gently stir with a spoon or whisk, being careful to not over mix. The batter will be slightly lumpy and that’s okay. If you over-mix you’ll get thin pancakes. Gently stir in the zest of one lemon.

Grease a pan with a small amount of vegetable oil. A paper towel works great for this. Place on a burner set to medium-high heat. The pan is hot enough when a drop of water breaks into several smaller balls which ‘dance’ around the pan.

Pour a small amount of batter (approx 1/4 cup) into pan and tip to spread out or spread with spoon.
When bubbles appear on surface and begin to break, turn over and cook the other side. About 1 1/2 minute per side.

Stack them up and top with syrup, berries and additional lemon zest, if desired.

Yup. That’s what I came up with. I brake for pancakes is my Pancake-ism. Here are some Pancake-ism examples, provided courtesy of Hungry Jack:

  • Slow and steady wins the race. Especially if that race is eating pancakes.
  • A wise man once said, bun rubber, not pancakes.
  • If you come to a fork in the road, follow the 0path les taken. See a fork in a pancake? Pick it up and eat it, before someone else does.
  • Rookies do donuts. Professionals do pancakes.
