2 Ingredient Ice Cream Muffins

Yep, you read that right! We’re serving up some good old fashioned ice cream muffins. Why just settle for a scoop of ice cream on top of your muffin when you can have it inside your muffin? I don’t promote serving these muffins as part of a healthy breakfast, but they do make for a wonderful and easy to prepare sweet treat.

Here’s What You’ll Need
These two ingredient muffins couldn’t be simpler to make. You’ll need 1 pint of your favorite Vanilla ice cream and 1 1/2 cups of self-rising flour.

Blend together flour and ice cream with a mixer until well combined. The batter will be a bit lumpy. Butter 6 muffin cups or spray with Baker’s Joy. Scoop batter into muffin cups. They should be about 3/4 full. Optionally, sprinkle tops of muffins with a 50/50 blend of sugar and cinnamon. Bake at 350 degrees for about 20 minutes.

If anyone else is lacking self-rising flour, here is how to make it from all-purpose: For each cup of all-purpose flour, add 1 1/4 teaspoons of baking powder and 1/4 teaspoon of salt.
