Peanut Butter and Nutella Sandwich Cookies

Summer break is flying by much too quickly. I have taken a bit of a step back from work this summer to have more time with my family and it’s been marvelous. So far my granddaughters have had a pretty fun summer with a visit to Stone Mountain Park, Six Flags in Atlanta, and Hilton Head Island. I have been able to find some great deals for local activities to keep us busy all summer long.

In the midst of beach vacations, amusement parks and summer blockbuster movies, it’s the little things that seem to make the more meaningful and happy summer memories. Doing crafts projects together, having a few friends over for an impromptu pool party, sitting on the back porch talking about the summer books we are reading are all beautiful summer memories.

Peanut Butter and Nutella Sandwich Cookies

ingredients:

1 cup sugar, plus 1/4 cup additional to roll cookies
1 stick butter, room temperature
1 egg
1 cup smooth peanut butter
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups flour
Nutella

directions:

Preheat oven to 375 degrees. Cover a baking sheet with a sheet of parchment paper or silicone liner. In a large bowl, cream together sugar and butter. Beat in the egg. Mix in the peanut butter and vanilla until mixture is smooth and creamy. Stir in salt, baking soda and flour until well combined. Roll dough into 1 inch balls and then roll in sugar. Place on baking sheet and flatten with fork. Bake for 12-15 minutes. Spread Nutella onto the flat side of one cookie. Place the flat side of another cookie onto the Nutella to form a sandwich.
