Yup. I’m one of THOSE people who gets overly excited when Fall rolls around, because that means pumpkin spice lattes are back. Hot or cold, I simply can’t get enough PSL. So, you can’t get enough pumpkin spice latte either? You’re in luck, because this moist and delicious pumpkin spice latte mug cake can be made in less than 5 minutes, and has all the same great flavors as your coffee shop favorite.

I really do love this time of the year. But, gosh, doesn’t it feel like it is flying by? Thanksgiving is less than a week away, then we’ll be kicking it into high gear for Christmas. I’m exhausted just thinking about it all. This simple-to-make mug cake will be a welcome treat at the end of a long day of Christmas shopping.

This is a mug cake, but it falls somewhere between the texture of pie and cake. The texture is soft and a little spongy. It’s oh-so wonderfully moist, and perfect for when you need a sweet treat at the end of the day and don’t want the fuss of making a full-size dessert. The recipe is for 1 large mug, but you could easily line up your mugs and whip up a bunch of the assembly line style. The more the merrier!

Pumpkin Spice Latte Mug Cake

Servings: 1 large mug

Ingredients:
1 cup all-purpose flour
1 teaspoon baking powder
2 teaspoon ground espresso (I used pumpkin flavored)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 cup pumpkin purée
1/3 cup granulated sugar
1/2 teaspoon vanilla extract
2 Tablespoons milk
Whipped cream
Caramel topping

Directions:

1. Spray mug with a non-coating spray like Pam.

2. Add the flour, baking powder, espresso, cinnamon and nutmeg to your mug. Using a fork, stir well to combine.

3. Add the pumpkin, vanilla and sugar and stir until well combined. Slowly add the milk and stir to incorporate all of the ingredients.4. Microwave on high for 2 minutes.

5. Remove from microwave and allow to cool for 5 minutes. (If you try to put the whipped cream on sooner, it will melt too fast).
