Quick Fix Fajitas using Tyson Grilled & Ready Chicken

Being able to provide a nutritious and delicious meal to my family on busy weeknights can sometimes be challenging at best, but over the years I have discovered some products and tricks that have made it much easier. By doing some prep work over the weekend, enlisting the help of the kids, and using products like Tyson Grilled & Ready® chicken, I am able to make a delicious meal in no time flat. Quick Fix Fajitas is a fabulous one pot meal, and one of my family’s favorites.

Quick Fix Fajitas using Tyson Grilled & Ready Chicken

Ingredients:
1 bag Tyson Grilled & Ready® Chicken Fajita Strips
1 envelope Fajita Seasoning Mix
1/4 cup water
1 package flour tortillas
1 onion, sliced
1 green pepper, sliced
1 yellow pepper, sliced
2 tablespoons olive oil, separated

Quick Fix Fajitas using Tyson Grilled & Ready Chicken

I love that the Tyson Grilled & Ready® chicken is fully cooked, all white meat, 98% fat free, and has no preservatives. The fully cooked meat really helps me to make dinner in a snap. To speed things up even more, prep your onion and peppers in advance and store in the fridge until ready to use. Many grocery stores have onion and pepper medleys that are already sliced and ready to use, if you don’t mind spending a bit more.

Directions:
In a large saucepan, add 1 tablespoon olive oil and the frozen chicken strips. Allow to chicken to partially cook, stirring occasionally. Remove partially cooked chicken to a plate, and set aside. To the same pan, add an additional tablespoon of olive oil, along with the peppers and onion. Saute for 3 to 4 minutes, then add the chicken back to the pan. Stir in the fajita seasoning packet, water, and continue to cook until peppers and onion are tender, and chicken is heated through.

Serve on flour tortillas, along with your favorite condiments like sour cream and salsa. This recipe is more than enough to feed five people – including hungry teenagers.
