How to Make Red Velvet Whoopie Pies

Preheat oven to 350 degrees. Line baking sheets with parchment paper or lightly grease.

In a large mixing bowl, beat first five ingredients on low speed just until moistened. Gradually add and mix in red food coloring, until you’ve achieved a deep red color.

Using a 1/4 cup measure, drop batter onto cookie sheets, approximately 2 inches apart.

Bake 13 to 15 minutes or until set. Allow to cool on cookie sheets for a few minutes, then transfer to cooling racks. Cool completely.

Dollop about 2 tablespoons of marshmallow creme onto the flat side of one cookie, being careful not to overfill. Place another cookie on top of creme, bottom side down.

  • 1 4 oz box instant chocolate pudding
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 tbsp red gel food coloring
  • 1 cup marshmallow creme
