I’m all about sitting down together as a family for dinner whenever possible, and eating a nutritious meal that I’ve prepared myself. I treasure those thirty minutes or so that we spend catching up on each other’s day. I know that my family is eating healthier when I prepare a home cooked meal, and that’s really important to me. However, there are some days when finding the time to do this is particularly challenging.

Over the years, I’ve found some shortcuts that really help. I’m a huge fan of cooking semi-homemade meals and love a good kitchen hack. Basically, anything that will help me skip the drive-thru! Plus, I’d much prefer to spend my time eating dinner with my family than cooking in the kitchen for an hour. A delicious and nutritious meal doesn’t have to take an hour or more to prepare. Today,  I’m sharing one of my favorite busy weeknight meal ideas that can be made in under 15 minutes.

A Busy Weeknight Meal Made with Real Potatoes

My favorite busy weeknight meal consists of a rotisserie chicken that I pick up from the supermarket on my way home, Idahoan® Mashed Potatoes, and a ready-washed salad kit. Seriously, it doesn’t get much simpler than that folks and it is a meal I can feel good about feeding my family. I pick up a rotisserie chicken probably twice a week. Sometimes I shred it to serve over fettuccine alfredo or use it to make some quick enchiladas.   • I love these potato’s!!! They make a fun after school snack. I smother them in cheese. Potatoes are such a comfort food for me.
