During this season of being thankful and cheerful giving, I am excited to celebrate Porksgiving by serving a lunch of Slow Cooker Root Beer Pulled Pork Sandwiches to some very special people who do so much for others in my community. To inspire people across the country to take the time to give and say thanks, the National Pork
Board (NPB) is celebrating “Porksgiving” – a time for giving back (with pork) to those who give back. After all, there’s no better way to show someone how much you appreciate them than with a home-cooked meal – and there’s no better home-cooked meal than one made with pork. You can find all kinds of delicious pork recipes over at the National Pork Board.

It’s hard to think of anyone who deserves delicious root beer pulled pork sandwiches more than the people in my county who work and volunteer for Family Connections and Communities in Schools, in partnership with Georgia Family Connection. Throughout the year they provide vital services to the community which includes a food pantry, monthly food box program, after school care, clothes closet, toy drive, health fair, school supply drive, and so much more. There are so many different programs and services offered throughout the year. They are able to accomplish so much with the help of some very special AmeriCorps volunteers.

Mom and I try to help them out in any way we can, whether it’s blowing up balloons at the health fair or putting together holiday care packages for the elderly. They are always in need of extra help.

Wanda and her team are such a wonderful group of people. Recently, my mom, Laura, and I were so happy to bring them lunch. We made one of our favorite slow cooker recipes for root beer pulled pork and served it sandwich-style, along with potato salad, coleslaw and chips.

Typically, I only cook one pork roast but for this occasion I doubled the recipe and used two slow cookers. When we showed up at noon with lunch, everyone was ready to dig in. It felt really good to say thanks in this small way.

Everyone loved the Root Beer Pulled Pork. Mom and I just stopped back in yesterday to drop off some toys for the toy drive, and they are still talking about those pulled pork sandwiches. I’d say this recipe is a keeper.

With only 3 ingredients, this is by far my favorite pulled pork recipe. It has a wonderful flavor and couldn’t be any simpler to make. You definitely want to try this recipe.

Slow Cooker Root Beer Pulled Pork Sandwiches

Slow Cooker Root Beer Pulled Pork

Ingredients:
2 lbs. New York Pork Roast (formerly top loin roast)
1 can root beer
18 ounce bottle barbecue sauce
8 hamburger buns

Directions:

1. Spray your slow cooker with non-stick cooking spray.
2. Place pork in slow cooker. Pour root beer over the pork.
3. Cover and cook on low heat for 6-8 hours or until it shreds easily with two forks.
4. Remove pork and shred it using two forks.
5. Drain most of the liquid from slow cooker (keep about 1/2 cup), and return shredded pork to slow cooker and stir in barbecue sauce. Continue heating on low for an additional 30 minutes, until warmed through.
6. Serve on hamburger buns.

Makes 8 servings.

This is one of those recipe that has been around forever. I can’t recall the first time I made it, but it’s been quite a while. Just use your favorite barbecue sauce and favorite brand of root beer. This recipe couldn’t be any simpler to prepare.
