Summer is finally here and it’s making a real statement. It’s HOT outside, though I am not complaining. After a bone chilling cold winter, I am so happy to feel the warm sun and see my backyard garden begin in full bloom. Even the hummingbirds have returned.
I adore sipping on a refreshing glass of iced tea during the spring and summer months. Here in the south, we drink our fair share of the stuff. It’s just so satisfying and refreshing.
Also, during the spring and early summer months, I like to take advantage of the abundance of strawberries. Sometimes, I’ll even buy them by the flat at the local farmer’s market. Strawberries make an appearance in so many of my spring and summer recipes like strawberry iced tea.
It’s time to start thinking about some sweet spring and summer drinks for friends and family to enjoy. This strawberry iced tea recipe is the perfect warm weather drink.
For this particular batch of strawberry iced tea, I took a shortcut and used Pure Leaf™ Sweet Tea. It’s perfectly sweetened and makes this drink incredibly easy to prepare.
Strawberry Iced Tea Recipe
1 pint fresh strawberries
2 – 18.5 ounce bottles Pure Leaf Sweet Tea
juice of one lime
mint sprigs for garnish
Wash strawberries and remove the tops. Place strawberries and lime juice in a blender. Pulse until smooth. Strain through a sieve.
In a pitcher, combine the tea and strawberry puree. Stir until well combined.
To serve, pour over a tall glass of ice. Garnish with a fresh mint. Enjoy!
Don’t you just want to take a sip of that?
Note: If your strawberries aren’t sweet enough, you can optionally add a teaspoon or two of sugar to the puree. However, with sweet strawberries this recipe is just as good when prepared with Pure Leaf Unsweetened Tea.
I have a couple of large mint plants in my herb garden that have survived the winter amazingly well. I love adding a sprig of mint to our beverages, especially during the spring and summer months. It’s a simple thing, yet it adds such wonderful flavor to drinks and desserts.
