Preheat oven to 400 degrees F and grease cookie sheets. Combine all ingredients in a large bowl. Mix until thoroughly incorporated. (Note: I ended up adding a bit more flour because my batter was slightly too loose.)
Drop the dough onto a greased cookie sheet using a teaspoon or small cookie scoop, approximately 1 inch apart. Bake for 14 minutes or until the cookies are firm. Move to wire rack to cool.
Recipe should make 2 - 3 dozen, depending on the size of your scoop.
