Equipment

  • microwave oven (I recommend the Galanz ExpressWave Microwave from Walmart)
  • large glass bowl
  • silicone spatula
  • rimmed baking sheet

Ingredients
  

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp butter
  • 1 tbsp vanilla
  • 1 cup salted, roasted peanuts

Instructions
 

  • Start by buttering a large rimmed cookie sheet or jelly roll pan or simply spray it with cooking spray.
  • In a small bowl, combine cinnamon, nutmeg, and baking soda. Set aside.
  • In a large glass bowl that is suitable for the microwave, combine sugar and light corn syrup. Microwave on high for 4 minutes.
  • Carefully remove the bowl from the microwave. It will be hot. Stir mixture with a silicone spatula and return to the microwave for an additional 3 to 5 minutes or until light golden brown in color.
  • Remove from the microwave with pot holders, as the bowl and ingredients will be very hot. Stir in the vanilla and butter, until combined. Stir in the cinnamon, nutmeg, and baking soda mixture. Stir in the salted, roasted peanuts.
  • Using a silicone spatula or spoon sprayed with no-stick spray, spread the mixture onto your greased baking sheet. Spread it out evenly until it is about the same thickness as the peanuts. Work quickly, so mixture does not set before it is spread onto the baking sheet.
  • Allow to sit for about 1-2 hours or until hardened.
  • Once hardened, use your hands go break peanut brittle into pieces.

Notes

Prep Tip: You will need to move quickly while making this peanut brittle, so it does not set until you have it spread out onto the baking sheet. I recommend having all of your ingredients measured ahead of time.
Prep Tip: You will need to have cooking spray on hand to keep the brittle mixture from sticking to your spatula or spoon and the sides of the bowl. Using no-stick spray will make cleanup much easier.
Storage Tip: If you are not going to enjoy the peanut brittle right away or are packaging it up for gift giving, I recommend placing a piece of parchment paper between each layer. Preferably, store peanut brittle in an airtight container.
Cleanup Tip: Before it hardens, peanut brittle is very sticky. Soak the bowl and utensils in hot water, dish soap and a little white vinegar. Let it sit for one hour and cleanup should be a breeze.
