The Dressing:

The Caviar:

  • 1 can black-eyed peas rinsed and drained
  • 2 cans black beans rinsed and drained
  • ½ red onion finely diced
  • 1 yellow, red, or orange pepper diced
  • 1 ½ cups corn kernels cooked
  • 1 jalapeno finely diced
  • 2 tomatoes diced
  • 3 tbsp cilantro shredded
  • salt and pepper

Instructions
 

  • In a bowl whisk together the honey, garlic, vinegar, oregano, olive oil, salt, and pepper.
  • In a large serving bowl, add the beans, red onion, peppers, corn kernels, jalapenos, tomatoes, cilantro, and a pinch of salt and pepper.
  • Pour over the dressing and then mix together until well coated.

Notes

  • You can prepare this dish ahead of time. Put it in the fridge for a few days and it will still taste great. Just hold off drizzling the dressing until you are about to serve the caviar. This will keep those veggies nice and crunchy.
