Ingredients
  

  • 1 - 14.75 oz can salmon drained
  • 2 eggs
  • 1 TBSP chives chopped
  • 3/4 cup breadcrumbs
  • 1 tsp lemon juice
  • Salt and pepper
  • Vegetable oil

Instructions
 

  • Place a pot on medium heat and heat the oil until it is sizzling.

  • In a bowl, add the salmon, eggs, chopped chives, breadcrumbs, lemon juice, salt, and pepper.

  • Use a spoon to mix it until well combined.

  • Divide the mix into 4 parts and use your hands to shape the mix into patties. Squeeze the patties together to make sure they stick together and shape nicely by patting them flat.

  • Gently place the patties into the hot oil and fry for 5 minutes on each side until golden brown.

  • Remove the patties from the oil and place them onto a paper towel to drain the excess oil.
