30-Minute Skillet Caprese Chicken

Ingredients
  

  • 3 boneless skinless chicken breasts Salt & pepper to taste 1 teaspoon Italian seasoning 2 tablespoons olive oil divided 3 garlic cloves, minced 1 pint cherry tomatoes 10 large fresh basil leaves, chopped 3 thick slices buffalo mozzarella cheese Balsamic vinegar, to taste

Instructions
 

  • Sprinkle both sides of chicken breasts with salt, pepper and Italian seasoning. Set aside.
  • In a large saute pan over medium-high heat, warm 1 tablespoon of the olive oil. Add chicken, cover pan, and cook for about 10 minutes. Flip chicken breasts and continue cooking until the chicken is cooked through.
  • While chicken is cooking, in a medium saute pan over medium-high heat, warm remaining 1 tablespoon olive oil. Add garlic and cook for about 1 minute, or until fragrant. Add halved tomatoes and continue to cook until tomatoes skin starts to wrinkle, about 5 minutes. Remove from heat and stir in basil. Set aside.
  • Once the chicken has reached desired doneness, place a piece of mozzarella on top of each chicken breast. Pour tomato mixture on top. Cover pan with lid once more and let the mozzarella melt, about 1-2 minutes.
  • Finish it off with a drizzle of balsamic vinegar and enjoy.
