– 1 tablespoon olive oil
– 1/4 cup chopped fresh cilantro
– 1 can 15 ounces black beans, drained and rinsed

Bring to a boil, then reduce heat to low, cover, and simmer until water is absorbed and rice is tender, about 18 minutes.
