Burrito Bowl 

– 1 cup long-grain white rice, rinsed – 2 cups water – 1 teaspoon salt – 1 tablespoon olive oil – 1/4 cup chopped fresh cilantro – 1 can 15 ounces black beans, drained and rinsed

Step 1

Bring to a boil, then reduce heat to low, cover, and simmer until water is absorbed and rice is tender, about 18 minutes.

Step 2

Fluff the cooked rice with a fork and stir in olive oil and chopped cilantro.
