Blueberry Bagels

In a large bowl, combine 1 1/4 cups warm water, 2 1/4 teaspoons active dry yeast, and 2 tablespoons granulated sugar. Stir and let sit for 5 minutes.

Add 5 cups of bread flour, 1 1/2 teaspoons of salt, and 1/2 teaspoon of vanilla extract to the yeast mixture. Stir until a thick, slightly sticky dough forms.

Turn the dough onto a lightly floured surface and knead for about 7-10 minutes until the dough is smooth and elastic. Gently fold in the pre-cooked blueberries during this process.

Form the dough into a ball and place it in a lightly oiled bowl. Cover with a damp towel and let it rise in a warm spot for about 1 hour.Punch down the dough and form into bagels.
