I do a LOT of baking for the holidays. It’s a bit excessive, really. I order a lot of my baking supplies by the case online, this time of the year.

Just seeing the boxes of powdered sugar, chocolate chips, and sprinkles is enough to put you into sugar overload. This year I’ll be adding something new to my baking arsenal, to lighten things up a little bit – Truvia® Baking Blend with sugar. In fact, these adorable little Christmas Tree Cupcakes that I made yesterday were prepared using Truvia’s White Cupcake and Vanilla Buttercream Frosting recipes. It’s amazing to me that these cupcakes taste so incredibly sweet and sinful, using less sugar.

You’ll be surprised by how simple these Christmas Tree Cupcakes are to make. The idea for these Truvia® cupcakes came from Martha Stewart, so you know they have to be good. The tree itself is a waffle cone covered in peaks of frosting, dusted with white sparkling sugar crystals. I used a Wilton #21 star tip. The inspiration piece had a star cut-out cookie topper. As you can see, mine does not. I couldn’t get the cookie to stay put without toppling the tree. In retrospect had I baked the star cookies with a toothpick inserted, they would have easily secured to the tree tops. Please learn from my mistake on this one.

Ingredients:

  • 12 waffle cones (2 to 2.5″ wide and 4 to 5″ long)
  • 12 Truvia® White Cupcakes
  • Truvia® Vanilla Buttercream Frosting
  • Green gel paste food coloring
  • Shredded sweetened coconut
  • White sparkling sugar crystals (optional)
  • Cupcake topper (optional – see tip above)

Directions:

Step 1: Use a serrated knife to trim point of each cupcake to create a small opening; set aside. If necessary, use the serrated knife to trim top of each cupcake to create a flat surface. Place a dab of frosting on top of each cupcake, and spread to cover. Dip the top of each cupcake into coconut to cover completely.

Step 2: Mix together remaining frosting with green gel paste until desired green shade is reached. Transfer green frosting to a large pastry bag fitted with a small star tip (I used Wilton #21 star tip). Working with one cone at a time, pipe a bead of frosting around open end of cone and position open-end down onto a cupcake to resemble a “tree.” Repeat process with remaining cupcakes and cones. Add snow with white sparkling sugar crystals (optional).

Step 3: Pipe remaining frosting decoratively all over trees until cones are completely covered. Trees can be refrigerated, uncovered, for up to 6 hours before serving. Before serving, insert a cupcake topper into the opening of each cupcake, if desired.
