Your kids want brownies, but you are out of eggs! What’s a mom to do? Make a batch of eggless brownies, of course. What? You didn’t know you could bake brownies without eggs? It’s time to discover how easy it is to whip up a tasty treat without running to the supermarket for a dozen eggs.

There’s a good chance you have everything you need to make a pan of delicious, fudgy, cake-like brownies right now. You only need eight ingredients: flour, sugar, cocoa powder, baking powder, salt, milk, butter, and vanilla extract. Of course, if you have some chocolate chips, toss them in for added fudginess.

I’ve said it before and I’ll say it again—you can never have enough brownie recipes. Sure, we all have our favorites. Some people like rich, gooey brownies, while others want a more cake-like texture bursting with intense chocolate flavor. That’s what you get when you make brownies without eggs—a treat with a cake-like consistency but deep, rich flavor.

Another factor that makes these brownies a good choice is that you don’t have to worry about your little ones licking the spoon, spatula, or bowl. You can enjoy a spoonful of brownie batter without any risks associated with raw eggs (keep in mind that the batter still has raw flour, though!).

The Secret for Baking Success Is Proper Measuring of Ingredients

I don’t know about you, but I always look for shortcuts to save time. That quest has led me to more kitchen mishaps than I care to mention. I used to dip my measuring cup into whatever flour I was using, then shake it to level it. WRONG! It is virtually impossible to get a proper measurement that way. No wonder my baked goods were never quite perfect.

That changed when I read online a few years back that you should always spoon your flour, sugar, etc., into the measuring cup rather than scoop it. This avoids packing the cup, which can remove air from the flour and cause too much in your recipe. First, fluff your flour in the container because it has likely settled. Then, use a spoon to scoop the flour into the measuring cup, filling it higher than the edge. Use the flat edge of a knife to level the flour to the cup’s rim, sweeping the excess flour back into the container. Whatever you do, never bang your measuring up on the counter or shake it to pack the flour. A spoon and knife are your best friends for getting perfect measurements for baking.

How to Make Ahead and Store

Brownies are a great make-ahead treat, especially if your child needs something for the school bake sale or a class party. They remain fresh at room temperature for up to 3 days. After they have cooled, store your eggless brownies in an airtight container. Brownies can be refrigerated for up to 5 days and frozen for up to 3 months.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 10 tablespoons milk
  • 1/2 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.

  • Add the milk, melted butter, and vanilla extract to the dry ingredients. Stir until just combined; avoid overmixing.
