I love these ice cream pie cups! They couldn’t be any simpler to make and they really transform an ordinary bowl of ice cream into something special. All you need to make these little cuties is a premade pie crust from Pillsbury, found in the refrigerator isle. You’ll also need a muffing tin.

Simple Ice Cream Pie Cups

Preheat oven to 350 degrees. Allow the pie crust to soften, according to package directions. Then unroll the pie crust onto your work surface. Use a 3 1/2 to 4 inch round cookie cutter or the mouth of a drinking glass to cut the dough into circles. You should get approximately 7 rounds from each crust.

Simple Ice Cream Pie Cups

To form the cups, turn over the muffin tin and gently place each of the circles over an ungreased muffin cup, stretching gently as needed. They will look like upside down bowls.

Bake in a 350 degrees for approximately 10-15 minutes, until golden brown.

To serve, fill each cup with a large scoop of ice cream and top with some fruit preserves and whipped cream. You could also use these pie cups for serving fresh fruit or pudding. The possibilities are endless!
