We are back to school in our county in less than two weeks, so I am already getting into school lunch mode for my grandkids. Making school lunch healthy and fun can get a little tricky at times, but it’s totally doable with a little effort, creativity and the right ingredients. I have found that one of the keys to making sure kids eat a healthy lunch is to give them lots of variety. This is true for both young children and bigger kids. In fact, I have noticed it even more as my grandchildren get older. If you are making something fun like homemade crustables, your child might even be eager to help with the preparation.
I am glad to partner with Vita Coco Kids to share this healthy and fun lunchbox idea. Homemade Crustables are simple to make – no special gadgets required. All you need is your favorite sliced bread, peanut butter, and jelly. Use the open end of a glass to cut circles from the bread.
Spread on a little peanut butter and jelly and put the sandwich together. Gently smoosh down with the palm of your hand, and use a fork to crimp the edges. These can easily be made the night before, and stored in the refrigerator.
If you are worried about wasting all that crust, you can toss them in the food processor to make fresh breadcrumbs for tonight’s dinner. At my house there are two begging pups eagerly waiting for a taste of crust.
I try to keep soda out of the house for the most part, and reserve it for special occasions. Soda is a no no for school lunch too. I am so glad we were recently asked to partner with Vita Coco Kids on the blog. It’s a tasty treat of naturally fruit flavored coconut water. My granddaughters just love it, and it’s sure to be a staple in our school lunches this year.
I now feel pretty confident that given the choice between soda and Vita Coco Kids, the girls would choose the latter. That’s something I feel really good about, because Vita Coco Kids is jam packed with natural electrolytes and is only made of ingredients you can actually pronounce – something that’s quite challenging with most food labels today.
Here’s a juicy little secret for you: Vita Coco Kids is free of artificial colors, sweeteners, flavors and preservatives!
