Strawberry Chocolate Chip Cake Mix Cookies are oh-so scrumptious and incredibly simple to make. Because a lot of the dry ingredients are already assembled in the mix, all you have to do is add in the wet ingredients, form the cookies and bake.

I absolutely love cake mix recipes. These Carrot Cake Mix Cookie Bars and Triple Chocolate Cake Mix Cookies are great, but Chocolate-Peanut Butter Cake Mix Bars are my favorite.

One of the fun thing about cake mix cookies is that there is so much flexibility with what you can do. With so many types of cake mixes out there, the flavor possibilities are endless. I love using stir-ins to change up the flavor and texture of my cookies. The addition of chocolate baking chips is perfect for these strawberry cookies. You can’t go wrong with strawberry and chocolate. It reminds me of chocolate covered strawberries, and who doesn’t love chocolate covered strawberries?

Can you use a different cake mix for these cookies?

Absolutely! If you don’t have a strawberry cake mix, you can totally swap it out for a different variety. French vanilla and chocolate cake mixes would both work really well as substitutes. Get creative with it!

Strawberry Chocolate Chip Cake Mix Cookies are oh-so scrumptious and incredibly simple to make.

Ingredients:

  • 1 box of strawberry cake mix, any brand
  • 1/2 cup oil
  • 1 large egg
  • 1/2 cup chocolate chips or mini chocolate chips

Ingredients:

Step 1: Preheat the oven to 350 degrees.

Step 2: In a large bowl, combine the strawberry cake mix, oil and large egg. Mixing well to combine the ingredients, but do not over mix.

Step 3: Add in the 1/2 cup of chocolate chips.

Step 4: Roll the cookie dough into 2″ balls and place about 2″ a part on your baking sheets.

Step 5: Bake 8-10 minutes. Do not over bake.

Step 6: Remove from the oven, let cool a few minutes and enjoy!

*Makes approximately 18 cookies.

Cake mix cookies are fun to make with the kids or to have ready for last minute guests. No one will ever guess that they have come from cake mix and there is no reason you need to tell them how simple they were to make. It will be our little secret.
