The soup gets its zesty flavor from garlic, Italian seasoning, and a dash of ground red pepper, but the true magic comes in the form of plenty of savory Parmesan and a scattering of mozzarella when serving. Who would’ve thought that a cheesy chicken soup borrowed from an Italian-American classic could be so good? The tomatoes give the soup brightness and subtle acidity, while pasta makes the soup satisfying and perfect as a meal all on its own.

Make it your way

Instead of rotini or penne, feel free to use any small pasta variety in this recipe. Ideal options include farfalle, ditalini, and orecchiette. For extra fiber, you may want to opt for a whole-wheat pasta, and if it’s more protein you’re after, try using a pasta made from legumes, such as chickpeas or lentils. If you don’t have canned tomatoes, fresh will work just as well. You’ll need about two cups for this recipe. Want to up the nutritional profile? Stir in a few handfuls of chopped spinach toward the end of the cooking time. After all, one can never have too many greens! Have some mushrooms? Slice them up and throw those in, too. And finally, if you don’t have chicken on hand, turkey is an equally delicious option.

How do I store leftovers?

Once cooled, transfer leftovers to an airtight container and store in the fridge for up to 3 days. You can also freeze the soup in a freezer-safe container for up to 3 months. Thaw overnight in the fridge. Gently reheat the soup on the stovetop until piping hot.

Ingredients
  

  • 3 cloves garlic minced
  • 1 green bell pepper chopped
  • 1/2 cup chopped white onion
  • 1 can diced tomatoes (14 1/2 ounces)
  • 2 boneless, skinless chicken breasts
  • 3 cups chicken broth plus more if needed
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/8 teaspoon ground red pepper
  • 4 ounces uncooked penne or rotini pasta
  • 1/2 cup shredded mozzarella cheese for topping
  • Chopped fresh parsley for garnish

Instructions
 

  • In a slow cooker, stir together garlic, bell pepper, onion, diced tomatoes, chicken breasts, chicken broth, Parmesan cheese, Italian seasoning, and ground red pepper. Cook on high for 3 1/2 hours or on low for 7 hours.

  • Transfer the chicken to a cutting board and shred into small pieces. Return chicken to slow cooker and stir in pasta. Cook on high 30 minutes.
  • At this time, if the soup is too thick, add some additional chicken broth and warm through.
