Vegetarian Potato Soup

In a large pot, heat the olive oil over medium heat. Add onion, celery, and carrots, and sauté until softened, about 5 minutes.

Add the vegetable broth, cubed potatoes, thyme, and bay leaf to the pot. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for about 20 minutes.

Step 2

Remove the bay leaf. Use an immersion blender to purée the soup directly in the pot to your desired consistency. For a creamier texture, stir in the optional heavy cream.

Ladle the soup into bowls. Serve hot, garnished with fresh parsley or chives if desired.
