Boil a pot of water. Put the carrots in the water and cook for 4-5 minutes depending on how soft/firm you like them to be.
Drain the carrots.
Drizzle the olive oil and maple syrup. Sprinkle the salt, pepper, and chopped parsley over the carrots and enjoy.
