Ingredients
  

  • 4 cups potatoes grated
  • 2 cups sour cream
  • 1 cup chicken and mushroom soup
  • 2 cups cheddar cheese shredded
  • ½ cup spring onions finely sliced
  • salt and pepper
  • 2 cups corn flakes
  • ¼ cups salted butter melted
  • ¼ cup Parmesan shredded

Instructions
 

  • Preheat the oven to 350°F.
  • Pour the sour cream, chicken, mushroom soup, cheddar cheese, spring onions, and salt and pepper into a bowl and mix together until nicely combined, add the grated potatoes and stir together.
  • Pour all of the potato mix into the casserole dish.
  • Mix the corn flakes, butter, Parmesan, and a pinch of salt and pepper together then lay on top of the potato base. Pop into the preheated oven and bake for 1 hour or until the potatoes are cooked through.

Notes

  • Grating the potatoes ensures even cooking and a smoother texture.
  • To stop the grated potatoes from turning brown, keep them under cold water until ready to use.
  • Squeezing out excess water from the grated potatoes will help the casserole hold its shape better.
  • For extra crunch, you can mix in some crushed crackers or panko breadcrumbs with the corn flake topping.
