Ingredients
  

  • 1 cup quick-cooking grits
  • 4 cups milk
  • 1 teaspoon salt
  • 1 1/2 cups 6 ounces extra-sharp white cheddar cheese, shredded
  • 6 slices bacon cooked and crumbled
  • 1/3 cup minced green onion
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • a dash or two of your favorite hot pepper sauce (optional)
  • 2 large eggs
  • 3 cups Panko bread crumbs
  • Vegetable oil enough to fill a deep skillet or Dutch oven 2-3 inches deep

Instructions
 

  • Using the 4 cups of milk and the salt, prepare the grits according to package directions. Remove the grits from the heat and stir in grated cheese, bacon, green onions, black pepper and chili powder. Pour into a lightly greased 8-inch square pan. Loosely cover the pan with plastic wrap and chill for 4 hours or overnight.
  • With your hands, roll chilled grits into 1 1/2 inch balls.
  • In a bowl, whisk together the eggs with 1/4 cup water.
  • Dip each ball into egg mixture then roll in Panko bread crumbs to coat.
  • Pour 2-3 inches of oil in a deep skillet or Dutch oven. Heat oil to 350 degrees. Fry fritters in batches for 3 to 4 minutes, until golden brown on all sides. Drain on a paper towel-lined plate and serve warm.
