Ingredients
  

  • 10 chicken drumsticks
  • Salt and pepper to taste
  • 2 tablespoons avocado oil
  • 1/2 yellow onion sliced
  • 10-12 garlic cloves peeled and chopped
  • 1/2 cup soy sauce
  • 1/2 cup distilled white vinegar
  • 1/4 cup water
  • 3 bay leaves
  • 1 1/2 teaspoons coarse ground black pepper

Instructions
 

  • Season the chicken drumsticks with salt and pepper to your liking.

  • Turn on the saute feature of your Instant Pot and heat the avocado oil. Brown the chicken drumsticks in batches to avoid overcrowding.

  • Once all the chicken is browned, return it to the pot. Add the sliced onion, chopped garlic, soy sauce, vinegar, water, bay leaves, and black pepper.

  • Secure the lid on the Instant Pot and set it to cook on high pressure for 9 minutes. After cooking, carefully perform a manual release of the pressure.

  • Remove the lid and switch the Instant Pot to the saute function again. Let the sauce simmer for 10-15 minutes, or until it thickens slightly.

  • Discard the bay leaves. Serve the chicken on a platter, drizzled with the thickened adobo sauce. It pairs wonderfully with steamed rice.
