Ingredients
  

  • 2 medium cucumbers sliced
  • 3 medium tomatoes diced
  • 1/2 small red onion thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh parsley optional

Instructions
 

  • In a large bowl, combine the sliced cucumbers, diced tomatoes, and thinly sliced red onions.
