2large chicken breasts or four smaller ones(1 pound)
1jar of your favorite red sauceI prefer tomato basil, any quality sauce will work nicely though.
1cupof organic flavorful tomatoes
4-8fresh basil leaves
2-4fresh garlic cloves
Himalayan salt or sea salt and pepper to taste
Instructions
Using the lowest setting on your stove (or slow cooker), pour the tomato sauce in and start to heat.
Trim the chicken breasts and add into the sauce.
Wash and chop the tomatoes, basil and garlic cloves, then add to the pot.
Using flavorful, organic tomatoes really makes this simple dish taste incredible.
Cover and simmer for 3- 6 hours (final amount of time will depend on the size of the chicken pieces and the actual cooking temperature). Stir occasionally and scrape down the sides.
When the chicken is fall apart tender, use two forks to pull apart and shred or put the chicken in your stand mixer and carefully turn it on low. Using the whisk attachment in the mixer will very quickly shred the chicken perfectly and with almost no effort.
Return the chicken into the sauce. Turn off the heat and let rest for about 15 minutes before serving. This is spectacular over pasta, in sandwiches, on pizza… This also freezes incredibly well.
